  • 1 bunch kale
  • 25 grams breadcrumbs
  • 1/2 garlic clove
  • 1/4 teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 50 ml lemon juice
  • 1/8 teaspoon red pepper flakes
  • Pepper to taste

Instructions

  1. Trim the bottom few inches off the kale stems and discard. Slice the kale into 2 cm. You should have 4 to 5 cups. Place the kale in a large bowl.
  2. Crush or finely chop the garlic and 1/4 teaspoon of salt to make a paste using a mortar, pestle, or knife. Put the garlic in a small bowl. Add 3 tablespoons of oil, lemon juice, a pinch of salt, pepper flakes, and pepper. Whisk everything together to combine.
  3. Pour the dressing over the kale and toss thoroughly (the dressing will be thick and require thorough tossing to coat the leaves).
  4. Let the salad sit for 5 minutes. If you’d like the kale to be softer, let it sit longer. Serve topped with the bread crumbs and a drizzle of oil.
