- 350 g can chickpeas, drained and rinsed
- 150 g carrots, peeled into ribbons or grated
- 1500 g spinach
- 1 small head of broccoli, roughly chopped
For the dressing:
- 2 tsp smoked paprika
- 4 cloves garlic
- 2 tsp dried mixed herbs
- 2 tsp honey
- 2 tsp soy sauce
- 2 tsp sesame oil
Instructions
- Heat some oil in a large pan over medium heat.
- Add chickpeas to the pan and fry them gently for 3-4 minutes until slightly crispy and sizzling.
- In a separate bowl, whisk together all the dressing ingredients.
- Pour the dressing over the chickpeas and add 4 tbsp of water. Bring it to a boil and cook for 1-2 mins until slightly reduced.
