Ingredients

Ingredients for 4 servings:

  • 900 grams of Fresh Spinach Leaves
  • ¼ cup Freshly grated parmesan Cheese
  • 1 tablespoon Butter
  • 100 grams of Cream Cheese at room temperature
  • 1 small Onion
  • 1 tablespoon minced garlic
  • ½ teaspoon Salt
  • ¼ teaspoon pepper

Instructions

  1. To make spinach in a creamy sauce, first, fill a big pot with water and bring it to a boil. Prepare an ice bath in another bowl while waiting for the water to boil.
  2. Once the water boils, add the washed spinach leaves and cook them for 30 seconds.
  3. Then, quickly remove the spinach from the hot water and put it in the ice bath.
  4. Leave it in the ice bath for 5-6 minutes, then strain it in a colander and set it aside.
  5. Melt some butter in a separate pot, and add chopped onion and minced garlic.
  6. Cook for 1-2 minutes until the onion softens and the garlic smell disappears.
  7. Add the blanched spinach, cream cheese, salt, and pepper to the pot.
  8. Cook for 1-2 minutes.
  9. Turn off the heat and blend the mixture with an immersion blender until smooth and creamy.
  10. Add some Parmesan cheese and stir.
  11. Top the spinach with extra-grated Parmesan and freshly cracked black pepper to serve.
