Ingredients

For 2 servings:

  • 2 tablespoons 2% plain Greek yogurt
  • 1 tablespoon mascarpone cheese
  • Pinch of ground cinnamon
  • 1 ½ teaspoons vanilla extract, divided
  • ¼ cup almond flour (substitute for all-purpose flour for lower carbs)
  • 2 tablespoons coconut sugar
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • 3 tablespoons unsweetened almond milk
  • 2 teaspoons coconut oil, melted
  • 4 strawberries, trimmed and halved, plus 2 strawberries, trimmed and sliced
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the Greek yogurt, mascarpone cheese, cinnamon, and ½ teaspoon of vanilla. Set aside.
  3. In another medium bowl, whisk together the almond flour, coconut sugar, baking powder, and baking soda. Make a well in the center and add 1 teaspoon of vanilla, almond milk, and melted coconut oil. Gently fold in the halved strawberries.
  4. Coat a small oven-safe ramekin or two small ramekins with cooking spray. Pour the batter into the ramekin(s), leaving some room from the top.
  5. Place the ramekin(s) on a baking sheet and bake in the preheated oven for 15-18 minutes, or until the cake rises and a toothpick inserted into the center comes out clean.
  6. Carefully remove the ramekin(s) from the oven. Allow to cool slightly, then add a few spoonfuls of the yogurt topping. Sprinkle with the sliced strawberries and enjoy warm.
