Ingredients

Ingredients for 12 servings:

  • ½ cup oats
  • ½ cup raw unsalted pumpkin seeds
  • 12 dates
  • 2 tablespoon chia seeds
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger powder
  • ⅓ teaspoon nutmeg
  • 2 – 3 tablespoon water
  • ½ cup ground almonds for dusting

Instructions

  1. Remove the pits from the dates and soak them in hot water for several minutes. Drain the dates and place them in a food processor when softening. Save the water.
  2. Add the other ingredients—oats, pumpkin seeds, chia seeds, and spices—to the food processor and blend until the mixture becomes a paste or dough-like consistency. If the mixture is too dry, add 2-3 tablespoons of the water in which you soaked the dates.
  3. To form the mixture into small balls, scoop it with a small spoon and roll it in ground almonds. Once rolled, place the balls on a baking sheet.
  4. Store the pumpkin seeds energy balls in an airtight container in the refrigerator until serving.
