Ingredients

Vegetable Rice Paper Rolls

  • 50g Dried Vermicelli Noodles
  • 8 Lettuce Leaves Use soft lettuce such as Butter lettuce
  • 1 Red Bell Pepper thinly sliced
  • 2 Carrots peeled and thinly sliced into matchsticks
  • 1 Cucumber thinly sliced into matchsticks
  • ½ cup Edamame Beans
  • ¼ cup Coriander (Cilantro) roughly chopped
  • 16 Mint Leaves
  • 8 Rice Paper Wrappers

Peanut Dipping Sauce

  • Three tablespoons Peanut Butter
  • 1½ tablespoon Rice Wine Vinegar
  • Two tablespoons of Soy Sauce
  • One tablespoon of Sesame Oil
  • ½ tablespoon honey
  • ½ tablespoon Ginger, minced
  • 2-3 tablespoons Water as needed

Instructions

Peanut Sauce

  1. Whisk together the Peanut Dipping Sauce ingredients until smooth. Thin with 2-3 tablespoons of water as needed. Adjust seasoning to taste.

Rice Paper Rolls

  1. Boil a pan of water and add noodles. Cook for 2 minutes or according to package instructions. After cooking, drain and rinse the noodles under cold water. Prepare all the filling ingredients beforehand and have them within reach. 
  2. Fill a large bowl with warm water and submerge a sheet of rice paper for 5 seconds. Remove the rice paper and let any excess water drip off. Then, place it carefully on a clean dish towel or board to prevent sticking. 
  3. On the bottom half of the rice paper, add a lettuce leaf, a small handful of noodles, some vegetables, coriander (cilantro), and two mint leaves. Fold the bottom edge of the rice paper over the fillings until they are fully covered. Fold the sides and continue rolling until it is sealed. Repeat with the remaining rice paper wraps. 
  4. Serve the spring rolls with the dipping sauce on the side. You can serve them whole or sliced in half with a sharp, wet knife. Enjoy!
